Shawn Cubberley

Shawn Cubberley has labored on the line, in pastries and in management for three of Denver’s finest chefs and now gets a chance to put all that expertise to work as the executive chef of the new Elway’s in The Lodge at Vail, in Vail, Colorado.
Cubberley’s kitchen career began at the age of 17 in a small, family-owned Italian restaurant in New York. An urge to move westward landed him in Chicago for four years where he was saucier, then sous chef at Green Dolphin Street, a fine dining jazz supperclub.
